New Head Chef, Joel Phyland is bringing waves of guests to Quality Hotel NOAH’S On The Beach, Newcastle.
Hot off his days heading restaurants in London, Indonesia and Ballina, Joel was lured by Quality Hotel NOAH’S On the Beach to lead the kitchen with a promise of the lifestyle he enjoyed growing up in Byron Bay. He couldn’t have picked a better time to start, with migrating whales being spotted most days from the restaurant.
Joel studied under Theodore Kyriakou, the most famous Greek Chef in London, at More, and credits Theodore’s phenomenal talent and willingness to share it, for fast-tracking his ability to lead in restaurant kitchens.
Joel’s creations are influenced by the sublime tastes of the Adriatic and Mediterranean, however his new menu caters for everyone. Seafood and dessert lovers will be particularly pleased by the creative new dishes on offer.
Coming from a culinary family, Joel says he “copped $5 an hour in kitchens throughout his childhood”. Back then, he didn’t know the dirty work would lead to the job of his dreams.
General Manager of NOAH’S, Debera Mackenzie, says Joel’s passion for food is infectious.
“He has natural flair. It’s hard to pick just one item from his menu, but I guess if I’m put on the spot, I’d say the Seafood Tower followed up by a Mandarin and Yoghurt Gateau Soft Glazed Meringue with Almond Praline.”
NOAH’S is a finalist in two of the 2017 Savour Australia Restaurant and Catering Hostplus Awards for Excellence, including NSW Regional – Function/Convention Centre Caterer, and NSW Regional – Restaurant in a Hotel/Resort.
The Savour Australia Restaurant and Catering Hostplus Awards for Excellence is a nationally recognised, independently judged awards program that recognises exceptional service and culinary talent across Australia.
The awards have been designed to recognise and promote industry best practice.
